Ingredients

Directions

The book says “a cool oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

Toast the spices

  1. Preheat your oven to 300°F (150°C).

  2. Place all the spices in the oven and leave them overnight.

Grind and store

  1. The next morning, pound the spices in a mortar.

  2. Sift the ground spices through a sieve.

  3. Store the mixture in a bottle with a glass stopper in a dry place.
