Directions

The book gives no oven temperature. The 400°F in the steps was added when the recipe was transcribed, as a starting point.

Prepare the batter

  1. Beat the butter to a cream, then add the sugar and mix well.

  2. Beat the egg whites for 30 minutes, then mix with the sugar and butter.

  3. Beat the yolks for 30 minutes, then combine with the whites.

Bake and serve

  1. Gradually add the flour, spices, and seeds just before baking.

  2. Pour into a hoop and bake for 2 hours in a hot oven (400°F/200°C).

  3. Let it stand for 2 hours before serving.

What each ingredient does

Eggs
Whipped whites and yolks give the cake its light, airy structure.
Butter
Creamed with the sugar, it adds richness and a tender crumb.
Flour, well dried
Provides the structure that sets the cake as it bakes.
Loaf sugar
Sweetens the cake and helps the creamed butter hold air.

The step that matters

Beat the egg whites and yolks separately. Whipping the whites and yolks for a long time traps air that leavens the batter. Folding them in gently and adding the flour last keeps that air from collapsing.

Swap the caraway

How well each one fits the dish's main ingredients (flour, butter, sugar, egg, nutmeg, cinnamon):

  1. Cardamomfits better
