Ingredients

Directions

The book says “an hot oven”. The 400°F in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Beat the yolks of 10 eggs and the whites of 5 eggs with 4 tablespoons of orange flower water until frothy.

  2. Gradually add 1 pound of sifted loaf sugar and beat for 30 minutes.

  3. Fold in ½ pound of flour and the grated rinds of 2 lemons.

Bake and serve

  1. Butter your tin and pour in the mixture.

  2. Bake in a hot oven (400°F / 200°C) for about 30 minutes, dusting with sugar before baking.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks and whites
Whisked eggs trap air, giving the batter lift and a light, sponge-like structure.
Loaf sugar
Sugar is beaten into the eggs, adding sweetness and helping stabilise the foam.
Flour
Flour folded into the batter provides structure as the eggs set in the oven.

The step that matters

Beating the sugar into the eggs. Beating in the sugar gradually helps dissolve it and keeps the foam stable. If the foam collapses, the biscuits will be dense rather than light.
