Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Pistachio nuts
Provide the main flavor and a nutty body once beaten into the cream.
Heavy cream
Supplies fat and richness, giving the cream its smooth, soft texture.
Egg yolks
Thicken the cream as they gently set over low heat.
Brandy
Adds a light aroma and helps break the nuts into a smooth paste.

The step that matters

Stir gently over low heat until thickened. Egg yolks set when heated, so high heat or rapid stirring can scramble them and leave lumps. Gentle, low heat lets the custard thicken evenly into a smooth cream.

Swap the nuts

How well each one fits the dish's main ingredients (pistachio, brandy, cream, egg):

  1. Almondfits better
  2. Hazelnutfits better
  3. Chestnutfits better
  4. Nutsthe original

Fit is the average pairing score against pistachio, brandy, cream, egg. Candidates are from the same food group and used in at least 100 recipes.
