Ingredients

Directions

Prepare the head

  1. Soak the calf's head in cold water for 1 hour.

  2. Place the head in a stew pan, cover with cold water and add ½ gallon more.

  3. Remove scum as it rises, then boil gently for 1 hour.

  4. Cut the head into 1.5‑inch pieces when cool.

Make the broth

  1. Prepare the broth the day before serving by simmering for 1.5 hours with spices and stale bread.

  2. Strain the broth and let it sit for 2 hours, then pour back without disturbing sediment.

Finish the soup

  1. Boil chopped vegetables for 5 minutes, then drain.

  2. Add the boiled vegetables to the broth and simmer until tender, about 45 minutes.

  3. Season with salt, cayenne, and ketchup.

  4. Add green pea liquor if available.

What each ingredient does

Calf's head
Provides gelatin and meat that give the soup body and a rich texture.
Stale bread crust
Helps clarify the broth and adds a subtle toasted flavor.
Vegetables
Add sweetness, aroma and body to the finished soup.

The step that matters

Removing scum while the head boils. Scum is coagulated protein and impurities that rise to the surface; skimming it as it forms keeps the broth clear and free of bitter, muddy flavors.

Swap the peas

The recipe marks peas as optional. How well each one fits the dish's main ingredients (pepper, ketchup, bread, allspice, mace):

  1. Walnutfits better
  2. Chestnutfits about as well
  3. Beansfits about as well
  4. Peasthe original

Fit is the average pairing score against pepper, ketchup, bread, allspice, mace. Candidates are from the same food group and used in at least 100 recipes.
