Green Goose Pie

Ingredients

Directions

  1. Pluck and singe the geese, then bone and wash them.

  2. Season the geese well with allspice, mace, pepper, and salt.

  3. Place one goose inside the other, pressing them close and drawing the legs inwards.

  4. Butter the outside of the geese and bake them with or without a crust.

  5. If making a pie, ensure the cover fits tightly to retain steam.
