Ingredients

Directions

The book says “a warm oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. Boil the carrots until very tender.

  2. Skin the carrots and sift them.

  3. Sweeten the carrot pulp to taste.

  4. Add ground allspice, grated lemon peel, and lemon juice.

  5. Mix well and pour into a pie dish.

  6. Bake without an upper crust in a 350°F (175°C) oven for about an hour.
