Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Goose
Provides the main meat, which becomes tender through long, gentle simmering.
Milk
Soaking in milk mellows the goose's flavour and helps keep the meat moist.
Onion
Stuffed inside the bird, it adds aromatic flavour to the meat as it cooks.

The step that matters

Boil slowly in cold water. Starting in cold water and simmering gently keeps the meat tender and prevents the skin and outside from toughening or breaking apart. A rolling boil can make the meat tough and dry.

Flavor stand-ins for the sage

How well each one fits the dish's main ingredients (milk, pepper, onion):

  1. Garlicbetter flavor fit
  2. Thymebetter flavor fit
  3. Celerybetter flavor fit
  4. Sagethe original

Fit is the average pairing score against milk, pepper, onion. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
