Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whipped for a long time, they trap air that makes the cake light and rise.
Fine loaf sugar
Sweetens the cake and helps stabilise the whipped eggs so they hold their air.
Fine flour
Sets during baking to give the cake its structure.
Sweet almonds
Add richness and moisture, giving a tender crumb.
Lemon
Adds bright acidity and fresh aroma from the rind and juice.
Orange-flower water
Adds a floral aroma that flavours the batter.

The step that matters

Fold in the flour just before baking. Flour develops gluten when stirred, and overmixing or waiting too long lets the whipped egg foam collapse. Folding gently and putting the batter straight into the oven keeps the air bubbles intact, so the cake stays light.

Swap the orange

How well each one fits the dish's main ingredients (egg, sugar, almond, lemon, flour):

  3. Figfits about as well
  4. Orangethe original

Fit is the average pairing score against egg, sugar, almond, lemon, flour. Candidates are from the same food group and used in at least 100 recipes.
