What each ingredient does

Brown sugar
Forms the bulk of the candy and provides its sweetness and caramel flavour.
Molasses
Adds depth of flavour and a darker colour to the candy.
Water
Dissolves the sugar so it can be boiled evenly into a syrup.
Hickory nuts, english walnuts, or black walnuts
Provide the nut pieces and crunch that the candy sets around.

The step that matters

Boiling the syrup until a portion hardens when cooled. Sugar syrup sets according to how far its water has boiled off. Too little boiling leaves the candy sticky and soft, while too much makes it brittle or scorched, so the cooled test is the check to rely on.

Swap the nuts

How well each one fits the dish's main ingredients (sugar, molasses):

  1. Almondfits better
  2. Chestnutfits about as well
  3. Beansfits about as well
  4. Nutsthe original

Fit is the average pairing score against sugar, molasses. Candidates are from the same food group and used in at least 100 recipes.
