Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Isinglass
Gelatin-like protein that sets the liquid into a firm, wobbly structure when chilled.
Egg whites
Whisked into foam to make the mixture light and fluffy, and help it hold its airy texture.
Orange juice
Provides the main citrus flavour and acidity, along with much of the liquid.
Sugar
Adds sweetness to balance the sharpness of the citrus juices.

The step that matters

Whisking until white and fluffy. The mixture must be whisked while the isinglass is still liquid and cool enough to hold air. Egg white foam traps air bubbles, and the mixture must be cool enough that the isinglass sets around them rather than collapsing.

Swap the orange

How well each one fits the dish's main ingredients (lemon, egg, sugar):

  1. Orangethe original
  2. Vanillafits about as well
  3. Limefits less well
  4. Raisinfits less well

Fit is the average pairing score against lemon, egg, sugar. Candidates are from the same food group and used in at least 100 recipes.
