Why it works: Peach and sugar are a kitchen classic. They rank in the top 17% of all ingredient pairs, and cooks put them together in 2,308 recipes. Both carry beta-damascenone, which smells apple, rose. The science ↓
Peach Sponge
Ingredients
Directions
Prepare the gelatine and syrup
Soak the gelatine in ½ cup of water for 2 hours.
Boil ½ cup of water with the sugar for 15 minutes.
Mash the peaches finely, rub through a sieve, and add to the syrup.
Cook for 5 minutes, stirring constantly.
Make the sponge
Place the saucepan in another pan of boiling water and add the gelatine.
Stir for 5 to 8 minutes until the gelatine dissolves.
Place the saucepan in a dish of ice water and beat the syrup until it begins to thicken.
When it can be poured, turn it into a mold and set aside to harden.
Serve
Serve with sugar and cream.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Gelatine
- Sets the liquid into a firm, sliceable sponge as it cools and hardens.
- Egg whites
- Whipped into the syrup to create the light, airy foam structure of the sponge.
- Peaches
- Provide fruit flavour and body to the sponge.
- Sugar
- Sweetens the syrup and helps stabilise the foam.
The step that matters
Beating the syrup while it cools. The syrup must be cooled in ice water and beaten only until it begins to thicken. If it is beaten while still warm, or past the point of thickening, the foam will not hold its air properly and the sponge may collapse or set unevenly.

Fit is the average pairing score against egg, sugar. Candidates are from the same food group and used in at least 100 recipes.
