Mock Lemon Pie

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, beat the egg yolks, then add sugar, milk, and water; mix well.

  3. Pour the mixture into a pie crust suitable for custard pie.

  4. In another bowl, beat the egg whites until stiff peaks form.

  5. Add 1 tablespoon of sugar and 1 teaspoon of lemon extract to the egg whites; mix gently.

  6. Spread the egg white mixture over the pie filling.

  7. Return the pie to the oven and bake until the topping is browned.
