What each ingredient does

Tapioca
Thickens the juices as it bakes, giving the pudding its soft, set body.
Apples
Provide the main fruit flavour and soften into tender pieces during baking and steaming.
Butter
Adds richness and fat to the powdered sugar sauce, giving it a smooth, creamy texture.

The step that matters

Soaking the tapioca. Tapioca must be soaked long enough to hydrate fully before baking; unsoaked pearls stay hard and chewy and won't thicken the pudding evenly.

Swap the clove

How well each one fits the dish's main ingredients (apple, sugar, butter, lemon):

  1. Cinnamonfits better
  2. Nutmegfits better
  3. Gingerfits better
  4. Clovethe original

Fit is the average pairing score against apple, sugar, butter, lemon. Candidates are from the same food group and used in at least 100 recipes.
