Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rhubarb
Provides the tart flavour and breaks down into a pulp that thickens the jam.
Sugar
Adds sweetness and, as the water evaporates, helps the jam set and keeps it preserved.
Sweet almonds
Add a mild nutty flavour and some body to the jam.
Lemon
Adds acidity and aroma, which helps the pectin set and brightens the flavour.

The step that matters

Boil for 30 minutes. Once the sugar is in, the jam must boil long enough for water to evaporate. Sugar and acid concentrate, and pectin from the fruit can then form a gel. Too short a boil leaves the jam runny, while overlong boiling can scorch the sugar, so stir often.

Swap the lemon

How well each one fits the dish's main ingredients (rhubarb, sugar, almond):

  1. Vanillafits better
  2. Figfits better
  3. Raisinfits better
  4. Lemonthe original

Fit is the average pairing score against rhubarb, sugar, almond. Candidates are from the same food group and used in at least 100 recipes.
