Potted Eels

Oven, in the book's wordsA slow oven

Ingredients

Directions

The book says “a slow oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

  1. Clean the eels and cut off their heads.

  2. Cut the eels into 2-inch pieces.

  3. Place the pieces in a brown earthen pot or a tin pot.

  4. Season with coarse sea salt, black pepper, allspice, and a few sprigs of parsley and thyme.

  5. Pour enough vinegar and water to cover the eels.

  6. Cover the pot and place it in a slow oven at 300°F (150°C).

  7. Cook until the flesh easily comes away from the bones.
