Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Lobster meat
Provides the main flavour and the bulk of the filling.
Bread crumbs
Absorb moisture and bind the filling so the croquettes hold their shape.
Egg
Binds the coating so the cracker crumbs stick to each ball.
Butter
Adds richness and helps the outside brown during frying.

The step that matters

Frying the croquettes until golden brown. The coating must set and brown in hot fat before the filling overheats. Frying at too low a heat lets the croquettes absorb grease and break open, while too high a heat burns the outside before the centre is hot.

Swap the mace

How well each one fits the dish's main ingredients (meat, lobster, pepper, bread, butter, egg, parsley):

  1. Nutmegfits better
  2. Thymefits better
  3. Tarragonfits better
  4. Macethe original

Fit is the average pairing score against meat, lobster, pepper, bread, butter, egg, parsley. Candidates are from the same food group and used in at least 100 recipes.
