Minced Fowls

Ingredients

Directions

Prepare the fowl

  1. Remove all flesh from the bones of the cold roast or boiled fowl and clean it from the skin. Keep covered until ready to use.

  2. Boil the bones and skin with ½ pint water until reduced by half.

  3. Strain the gravy and let it cool.

Make the sauce

  1. Skim off the fat from the gravy and put it into a clean saucepan with ½ cup cream and 3 ounces butter mixed with 1 tablespoon flour. Stir until it boils.

  2. Add the minced fowl and chopped hard-boiled eggs, seasoning with salt and pepper. Stir over heat until just ready to boil.

Serve

  1. Serve the mixture on hot toast.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cold roast or boiled fowl
Provides the main minced meat that makes up the body of the dish.
Cream
Adds richness and a smooth, creamy texture to the sauce.
Butter
Adds fat and flavour, and with flour helps thicken the sauce.
Flour
Thickens the butter and gravy mixture so the sauce holds together.
Hard-boiled eggs
Add body and a soft, rich texture to the minced mixture.

The step that matters

Stir over heat until just ready to boil. Once the flour-thickened sauce reaches a simmer it sets to a smooth consistency; boiling hard or too long can cause it to separate or go stiff, and the eggs can toughen.
