Cucumbers in Brine

Ingredients

Directions

  1. Wash cucumbers well in cold water.

  2. Make a brine with salt and water strong enough to float an egg.

  3. Place cucumbers in the brine daily as you gather them.

  4. Cut a board to fit inside the barrel, bore holes in it, and place it on the cucumbers with a weight to keep it down.

  5. Remove the scum that rises each day.

  6. When ready to use, soak cucumbers for 2 to 3 days to remove excess salt.

  7. Pour boiling spiced vinegar over the cucumbers.

  8. Add red pepper if you prefer hot pickles.
