Why it works: Onion and pepper are a kitchen classic. They rank in the top 11% of all ingredient pairs, and cooks put them together in 68,474 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Wash the onions but do not peel them.

  2. Boil the onions in salted water for 30 minutes.

  3. Carefully lift the onions out with a slotted spoon and place them closely together in a baking pan.

Bake and serve

  1. Sprinkle the onions with salt and pepper, and place ½ tablespoon of butter on each onion.

  2. Bake the onions in a hot oven at 400°F (200°C) for 30 minutes until tender and browned.

  3. Serve hot.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Onions
Become tender and sweet as they cook, and their skins help hold the shape.
Butter
Adds fat that carries flavor and helps the onion surfaces brown.

The step that matters

Boiling the onions in salted water. Boiling for the full 30 minutes softens the onions before baking. If they are undercooked, they may stay firm in the oven, and the browning will not make up for it.

Swap the onion

How well each one fits the dish's main ingredients (pepper, butter):

  1. Capsicumfits better
  2. Potatofits better
  3. Carrotfits about as well
  4. Onionthe original

Fit is the average pairing score against pepper, butter. Candidates are from the same food group and used in at least 100 recipes.
