Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatine
Sets the liquid mixture into a light, stable structure as it cools.
Egg whites
Whipped into a foam that gives the dessert its airy, light texture.
Strawberries
Provide the main fruit flavour and colour.
Sugar
Sweetens the mixture and helps stabilise the whipped foam.
Lemon juice
Adds acidity that brightens the strawberry flavour.

The step that matters

Adding the strawberry mixture to the whites. Egg whites beaten until stiff trap air in a foam. Adding the strawberry mixture gradually while still beating keeps the foam from deflating, so the whip stays light instead of becoming dense and watery.
