Crisp Almonds

Oven, in the book's wordsA hot oven

Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Scald the fresh almonds and let them stand for a few minutes.

  2. Husk the almonds when the skins slip off easily.

  3. Wipe the almonds dry and place them in a single layer in a pan.

  4. Bake in a hot oven at 400°F (200°C), shaking and stirring almost constantly until golden brown.

  5. Alternatively, stir them over the fire in a clean skillet.

  6. Salt the almonds while hot and spread them on plates.

  7. Store in a warm, dry place.
