Old-Fashioned Taffy

Ingredients

Directions

The book gives no oven temperature. The 240°F in the steps was added when the recipe was transcribed, as a starting point.

Make the taffy base

  1. In a large pot, combine the black molasses and butter over medium heat.

  2. Stir continuously until the mixture reaches a soft ball stage (around 240°F or 115°C).

  3. Remove from heat and stir in vanilla extract and a pinch of coarse sea salt.

Pull and finish

  1. Pour the mixture onto a greased surface and let it cool slightly.

  2. Once cool enough to handle, pull the taffy until it becomes light in color and chewy.

  3. Cut into pieces and wrap in wax paper.

What each ingredient does

Black molasses
Provides the dark color, deep flavor and sweetness that form the taffy base.
Butter
Adds fat, which softens the texture and makes the taffy less brittle.
Vanilla extract
Adds aroma that rounds out the strong molasses flavor.

The step that matters

Cooking to the soft ball stage. Sugar syrup must reach about 240°F (115°C) to set into chewy taffy. Stopping early leaves it too soft, while overcooking makes it hard and brittle. Constant stirring prevents scorching on the bottom of the pot.

Swap the vanilla

How well each one fits the dish's main ingredients (molasses, butter):

  1. Raisinfits better
  2. Figfits better
  3. Applefits about as well
  4. Vanillathe original

Fit is the average pairing score against molasses, butter. Candidates are from the same food group and used in at least 100 recipes.
