What each ingredient does

Egg white
Whipped into a stiff foam that gives the icing its light, airy body.
Powdered sugar
Dissolves into the foam to add sweetness and firm up the icing's thickness.

The step that matters

Adding the powdered sugar gradually. Sugar added slowly dissolves into the beaten egg white and keeps the foam smooth and spreadable. Adding it all at once can stiffen the icing unevenly and make it hard to spread.

Swap the lemon

How well each one fits the dish's main ingredients (egg, sugar):

  1. Vanillafits better
  2. Raisinfits about as well
  3. Lemonthe original
  4. Datesfits less well

Fit is the average pairing score against egg, sugar. Candidates are from the same food group and used in at least 100 recipes.
