Bread with Compressed Yeast
Ingredients
Directions
Divide the yeast cake into quarters and set one quarter aside to make a small sponge.
Place the other quarters in a small bottle, cover with cold water, cork, and refrigerate until needed.
When the sponge is light, stir it down and add a little more flour and water.
Once the sponge is light again (in less than an hour), shape it into a loaf.
Let the loaf rise, then knead it down again, and let it rise once more.
Knead into small loaves and bake when they are light and a rich brown.
