The Best Way to Dress Salsify

Ingredients

Directions

  1. Cut off the top leaves of the salsify, leaving the crown intact. Wash and scrape the dark skin off each root, placing them in cold water to prevent discoloration.

  2. Boil salted water in a pot and add the salsify. Cook until nearly done but still firm.

  3. Remove from heat, drain, and cool the salsify by pouring cold water over it.

  4. Grate the cooled salsify and mix with butter, flour, the raw egg, salt, and pepper.

  5. Heat lard in a deep pan. Drop spoonfuls of the salsify mixture into the hot lard, frying until golden brown.

  6. Remove with a skimmer and place on a hot dish. Serve immediately for best taste.
