Serving Raw Oysters
Ingredients
Directions
Make the ice bowl
Fill the large bowl with clear water and set the smaller bowl inside it.
Place the setup outdoors until the water freezes solid.
Remove the smaller bowl to create a cavity in the ice.
Detach the ice from the large bowl by briefly placing it in hot water.
Set up and serve
Prepare a platter or wooden slab with fresh moss and sprinkle with holly berries.
Pour a little water in the center of the moss, set the ice cake upright, and freeze it to the platter.
Fill the cavity with fine raw oysters and serve immediately.

What each ingredient does
- Fine raw oysters
- Are the served food, so their freshness and cold temperature define the dish.
- Clear water
- Freezes into the ice cake that holds the oysters and bonds it to the moss.
The step that matters
Detach the ice from the large bowl by briefly placing it in hot water.. Only a brief dip melts a thin outer layer so the ice releases. Longer exposure melts too much and can crack or weaken the cake, while the cavity must stay frozen to hold the oysters cold.
