Ingredients
Directions
Boil the heart, liver, smelt, sweetbreads, upper head, rinds, and lean pieces of a pig until well done.
Remove the meat from the liquid, take out the bones, and chop the meat while hot.
Return the chopped meat to the hot liquid and season with salt, pepper, and sage to taste.
Thicken the mixture with buckwheat flour while boiling hot until it cleaves from the kettle.
Pour the mixture into deep square pans and let it cool.
For breakfast, cut thick slices and fry in a little lard in a hot skillet.
Brown one side, then turn carefully without poking to maintain shape.
