Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Green tomatoes
Form the bulk of the preserve and give its tart, fresh base flavour.
White loaf sugar
Sweetens the preserve and thickens it as the syrup cooks down.
Lemon
Adds acidity and bright aroma that balance the sweetness.
Powdered sugar
Dissolves into the cooked fruit to add final sweetness.

The step that matters

Skim until clear. Foam and impurities rise to the surface as the sugar and fruit cook. Removing them keeps the preserve clear and stops off flavours from being stirred back in.

Swap the tomato

How well each one fits the dish's main ingredients (sugar, lemon):

  1. Arrowrootfits better
  2. Sweet potatofits better
  3. Kalefits better
  4. Tomatothe original

Fit is the average pairing score against sugar, lemon. Candidates are from the same food group and used in at least 100 recipes.
