What each ingredient does

Oatmeal
Thickens the water as its starches swell and gelatinize during boiling, giving the gruel body.

The step that matters

Boil for 30 minutes, stirring frequently. Oatmeal starch thickens only as it gelatinizes in hot liquid, and stirring prevents it from settling and scorching on the bottom of the pan.
