Why it works: Nutmeg and pepper match in chemistry and in kitchens. They rank in the top 7% of all ingredient pairs, and cooks put them together in 13,015 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Oyster Loaves

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Take small round loaves and make a round hole in each, scraping out all the crumbs.

  2. Remove the gills from the oysters and place them in a saucepan with their liquor, a few crumbs, butter, nutmeg, cayenne pepper, and cream.

  3. Cook the mixture for five minutes, stirring continuously.

  4. Fill the loaves with the oyster mixture and replace the tops carefully.

  5. Place the filled loaves in a 400°F (200°C) oven to crisp them.

  6. Serve hot.

Flavor stand-ins for the nutmeg

How well each one fits the dish's main ingredients (oyster, butter, pepper, cream):

  1. Nutmegthe original
  2. Parsleyabout as good a flavor fit
  3. Celeryabout as good a flavor fit

Fit is the average pairing score against oyster, butter, pepper, cream. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
