What each ingredient does

Jordan almonds
Provide the body and nutty flavor of the pudding base.
Egg yolks
Bind the mixture and set during baking to give a rich, custardy texture.
Cold butter
Adds richness and fat, giving the pudding a tender, smooth texture.
Lemon juice
Adds acidity and bright lemon flavor that balances the richness.
Puff pastry
Forms a flaky, crisp base under the pudding mixture.

The step that matters

Working the mixture until white and light. Beating the yolks, butter and almond paste together incorporates air and emulsifies the fat, so the filling bakes smooth and light rather than dense or greasy.
