Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Swiss milk
Provides the dairy base and creamy body of the sauce.
Corn flour or arrowroot
Thickens the liquid as it boils, giving the sauce body.
Remnants of jam
Adds sweetness and fruit flavor to the finished sauce.

The step that matters

Boil the mixture until it thickens. Starch thickens only when heated to a boil, so stopping early leaves the sauce thin. Starch added to liquid must be blended first in cold liquid to prevent lumps.

Swap the currant

The recipe marks currant as optional. How well each one fits the dish's main ingredients (milk, corn, rum, brandy, wine, vanilla, almond):

  1. Figfits better
  2. Peachfits better
  3. Apricotfits better
  4. Currantthe original

Fit is the average pairing score against milk, corn, rum, brandy, wine, vanilla, almond. Candidates are from the same food group and used in at least 100 recipes.
