What each ingredient does

Stale tin loaf
Provides the sturdy base that holds the butter and crisps when toasted.
Salt butter
Adds moisture, richness and flavour, soaking into the toast as it melts.

The step that matters

Skimming the butter. Butter melted in boiling water separates into fat and water. Skimming off only the clear fat, and leaving the water behind, keeps the toast from becoming soggy.
