Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eels
Provide the main flavour and body of the broth as they simmer.
Onion
Adds savoury sweetness and aroma to the broth as it simmers.
Sweet herbs
Add fresh, aromatic flavour to the broth.

The step that matters

Simmering and skimming. Simmering gently keeps the broth clear, while removing scum as it rises prevents cloudiness and off flavours. Reducing by half concentrates the flavour, so it should be watched closely.

Swap the onion

How well each one fits the dish's main ingredients (parsley, clove, pepper):

  1. Carrotfits better
  2. Shallotfits better
  3. Capsicumfits better
  4. Onionthe original

Fit is the average pairing score against parsley, clove, pepper. Candidates are from the same food group and used in at least 100 recipes.
