Veal Olives

Ingredients

Directions

  1. Cut large collops off a fillet of veal and hack them well with the back of a knife.

  2. Spread forcemeat very thin over each collop and roll them up.

  3. Roast or bake the rolled collops in the oven.

  4. Make a ragout of oysters, sweetbreads, morels, and mushrooms.

  5. Place the ragout in a dish with the veal rolls and pour nice brown gravy over them.

  6. Serve hot.
