Why it works: Clove and ginger match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 6,038 recipes. Both carry estragole, which smells anise, licorice. The science ↓

Rhubarb Syrup

Ingredients

Directions

Prepare the rhubarb

  1. Wipe the rhubarb but do not skin it, then cut it into finger lengths.

  2. Place the rhubarb in a saucepan with the cold water and boil until it is completely broken up.

  3. Pass the mixture through a canvas bag into a pan and let it cool.

Make the syrup

  1. Once cool, add the sugar, cloves, ginger, lemon rind (only the yellow part), and lemon juice.

  2. Boil again until the mixture reduces and thickens slightly.

  3. When cold, bottle and cork the syrup.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rhubarb
Provides the tart flavour and the bulk of the syrup's body once broken down.
Lump sugar
Sweetens the syrup and, as it boils down, thickens it and helps preserve it.
Lemon juice
Adds acidity that brightens the flavour and balances the sweetness.

The step that matters

Boil again until the mixture reduces and thickens slightly. Boiling drives off water and concentrates the sugar and fruit solids, so the syrup thickens as it cools. Stopping too early leaves it thin and more prone to spoiling; boiling too long makes it overly stiff.

Swap the rhubarb

How well each one fits the dish's main ingredients (sugar, lemon, clove, ginger):

  1. Cinnamonfits better
  2. Cardamomfits better
  3. Allspicefits better
  4. Rhubarbthe original

Fit is the average pairing score against sugar, lemon, clove, ginger. Candidates are from the same food group and used in at least 100 recipes.
