What each ingredient does

Strong ale vinegar
Adds acidity that sharpens flavour and helps preserve the fish.
Beer
Adds malty depth and body to the cooking liquid.
Ginger
Adds warm, aromatic spice to the fish.
Cloves
Adds strong aromatic spice that flavours the fish.

The step that matters

Boil until the fish separates from the bone. Hard, rolling boiling breaks up delicate fish flesh and toughens it. Keeping the liquid at a gentle simmer lets the fish cook evenly and stay in intact pieces.

Swap the ginger

How well each one fits the dish's main ingredients (beer, pepper, clove, vinegar):

  1. Allspicefits better
  2. Thymefits about as well
  3. Gingerthe original
  4. Tarragonfits about as well

Fit is the average pairing score against beer, pepper, clove, vinegar. Candidates are from the same food group and used in at least 100 recipes.
