What each ingredient does

Egg yolks
Mashed smooth with oil or cream, they form a rich, emulsified base for the dressing.
Vinegar
Adds acidity that brightens the salmon and balances the richness of the yolks.
Olive oil or milk/cream
Adds fat and moisture, giving the yolk paste a smooth, creamy texture.
Salmon
Provides the main body and flavour of the salad.
Mustard
Adds sharpness and helps bind the dressing to the yolk paste.

The step that matters

Mashing the yolks smooth with the oil or cream. If the yolks are left in lumps, the dressing will not blend evenly. Mashing them fully with fat lets the yolk paste emulsify and coat the salmon smoothly.
