Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sugar
Provides sweetness and, with the liquid, forms the body of the sauce.
Butter
Adds fat for a rich, smooth texture and mouthfeel.
Eggs
Egg yolks thicken the sauce as they heat, and the whites add lightness through foaming.

The step that matters

Adding the egg yolks to the boiling mixture. Egg yolks can scramble if added to very hot liquid without enough stirring. Beating them first and adding them while stirring helps keep the sauce smooth and thick.
