What each ingredient does

Egg whites
Beaten to lighten the batter and give it structure as it sets in the oven.
Egg yolks
Add richness and help the mixture set into a tender, custard-like texture.
Almonds
Provide the main flavour and a moist, dense body to the filling.
Fresh butter
Adds fat for richness and a tender crumb.
Powdered sugar
Sweetens the mixture and helps it turn light when beaten with the whites.
