Peach Preserves

Ingredients

Directions

Prepare the peaches

  1. Pare the peaches.

  2. Split them in half, removing the stones.

  3. Place the peaches in a bucket of water to prevent browning.

Make the syrup and cook the peaches

  1. Make a syrup using equal pounds of sugar and peaches.

  2. Boil the syrup until thick.

  3. Add enough peaches to cover the bottom of the kettle.

  4. Boil the peaches until nearly done.

  5. Remove them with a perforated spoon.

  6. Lay the peaches in dishes.

  7. Set them in the sun.

  8. Repeat the boiling process for all peaches until they are a pretty amber color.

  9. Scald and skin the peach kernels.

  10. Add them to the boiling syrup until very thick.

Jar and store

  1. Once cool, place the peaches in glass jars.

  2. Pour the syrup over them.

  3. Check the syrup after a few days.

  4. If it has thinned, boil it again.

What each ingredient does

White freestone peaches
Provide the fruit that is cooked into the preserves, giving flavor and body.
White sugar
Thickens the syrup and preserves the fruit, adding sweetness.
Peach kernels
Are boiled into the syrup to add flavor and help it thicken.

The step that matters

Boiling the syrup until thick. Sugar must concentrate the syrup enough to preserve the fruit and set it. If the syrup is under-boiled it thins over time, as the later check step shows, and the preserves can spoil.
