Directions

Prepare the squabs

  1. Prepare the squabs by picking and drawing them like a large fowl for roasting.

  2. Wash the squabs.

  3. Place the squabs in a saucepan covered with boiling water.

  4. Boil the squabs slowly until tender.

  5. Add salt and an onion clove to the boiling squabs.

  6. Remove the squabs from the water.

  7. Drain and dry the squabs.

Make the giblet liquor

  1. Boil the livers in the water left from cooking the squabs, along with celery and sweet herbs.

  2. Season the livers with mushroom or walnut catsup.

Assemble and bake

  1. Stuff each squab with 1 teaspoon of butter, a little pepper, salt, minced parsley, and thyme.

  2. Place a hard-boiled egg in the cavity of each squab.

  3. Lay the squabs in a large, round, earthen baking dish.

  4. Strain the cooking liquid over the squabs.

  5. Add 1 tablespoon of butter and 1 teacup of milk or cream to the dish.

  6. Sift in 2 tablespoons of unbrowned cracker crumbs, minced parsley, thyme, and a little salt.

  7. Add a few slips of pastry, cover with a rich crust, and bake.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Squabs
Provide the tender meat that is the main body of the pie.
Hard-boiled egg
Adds a firm, rich filling element inside each squab.
Milk or cream
Adds moisture and richness to the liquid poured over the squabs.
Cracker crumbs
Thicken and absorb liquid in the dish as it bakes.
Butter
Adds fat and richness to the stuffing and the dish.

The step that matters

Boil the squabs slowly until tender. Vigorous boiling toughens poultry proteins and can break the birds apart, while slow simmering keeps the meat tender and moist.

Swap the clove

How well each one fits the dish's main ingredients (liver, celery, mushroom, squab, onion, butter, pepper):

  1. Thymefits better
  2. Parsleyfits better
  3. Garlicfits better
  4. Clovethe original

Fit is the average pairing score against liver, celery, mushroom, squab, onion, butter, pepper. Candidates are from the same food group and used in at least 100 recipes.
