Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Assemble the first crust

  1. Preheat the oven to 400°F (200°C).

  2. Place a pie crust in the bottom of a dish.

  3. Layer sliced apples and powdered sugar alternately until the dish is filled.

  4. Add rose water and cloves.

  5. Cover with another pie crust.

  6. Bake until golden.

Make the filling

  1. Stew apples until done and dry.

  2. Rub through a colander.

  3. Sweeten the apple puree with powdered sugar.

  4. Once cool, mix in egg whites and whipped cream.

Finish and bake

  1. Spread the filling on baked pie crusts.

  2. Grate nutmeg on top.

  3. Add bits of butter.

  4. Cover with another crust.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Apples
Provide the bulk of the filling and its tart, fruity moisture once cooked down.
Powdered sugar
Sweetens the apples and helps draw out their juices while layering.
Egg whites
Help the cooled filling set and give it a light, stable structure.
Whipped cream
Adds a soft, airy texture and richness to the filling.
Butter
Adds fat and richness, and helps the top crust brown.

The step that matters

Stew apples until done and dry. Excess water left in the apple puree can thin the filling and make the crust soggy. Cooking the apples down until dry keeps the filling thick enough to hold its shape once the egg whites and cream are added.

Swap the apple

How well each one fits the dish's main ingredients (sugar, rose, clove, egg, cream, nutmeg, butter):

  1. Vanillafits better
  2. Lemonfits better
  3. Figfits better
  4. Applethe original

Fit is the average pairing score against sugar, rose, clove, egg, cream, nutmeg, butter. Candidates are from the same food group and used in at least 100 recipes.
