Apple Pie

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat the oven to 400°F (200°C).

  2. Place a pie crust in the bottom of a dish.

  3. Layer the sliced apples and powdered sugar alternately until the dish is filled.

  4. Add a few teaspoons of rose water and some cloves.

  5. Cover with another pie crust and bake until golden.

  6. For a richer filling, stew the apples until dry, then rub through a colander.

  7. Sweeten the apple puree with powdered sugar and let it cool.

  8. Once cool, add the whites of three eggs and a teacup of whipped cream.

  9. Beat all ingredients together until well combined.

  10. Spread the mixture onto baked pie crusts in shallow pie plates.

  11. Grate nutmeg on top and add a few bits of butter.

  12. Dredge with flour and cover with another crust before baking.
