Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 400°F (200°C).

  2. Place a pie crust in the bottom of a dish.

  3. Layer sliced apples and powdered sugar alternately until the dish is filled, then add rose water and cloves.

Make the filling

  1. For the filling, stew apples until thoroughly done and dry, then rub through a colander.

  2. Sweeten the apple puree with powdered sugar and let cool.

  3. Fold in egg whites and whipped cream.

Assemble and bake

  1. Spread the filling onto baked pie crusts.

  2. Grate nutmeg on top and add bits of butter.

  3. Dredge with flour and cover with another crust before baking.

  4. Cover with another pie crust and bake until golden.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Apples
Provide the bulk and moisture of the filling, with tart flavor once stewed and pureed.
Powdered sugar
Sweetens the apple puree and balances the tartness of the fruit.
Egg whites
Folded in, they trap air and give the filling a lighter, set texture.
Whipped cream
Folded in, it adds richness and a softer, airy texture to the filling.
Butter
Adds richness and fat, and helps the top brown as it bakes.

The step that matters

Fold in egg whites and whipped cream. Folding gently keeps the air trapped in the egg whites and cream, so the filling stays light. Stirring vigorously deflates it, leaving a dense, heavy filling.

Swap the apple

How well each one fits the dish's main ingredients (sugar, rose, clove, egg, cream, nutmeg, butter):

  1. Vanillafits better
  2. Lemonfits better
  3. Figfits better
  4. Applethe original

Fit is the average pairing score against sugar, rose, clove, egg, cream, nutmeg, butter. Candidates are from the same food group and used in at least 100 recipes.
