Beet-molasses

Ingredients

Directions

  1. Boil white sugar beets and one or two blood beets for several hours until the liquid is a fine red color.

  2. Remove the beets and strain the liquid through a flannel bag.

  3. Beat the eggs and pour them into the cooled beet syrup.

  4. Return the mixture to the fire and remove any scum that rises.

  5. Boil the syrup rapidly until it thickens to a syrupy consistency, similar to maple molasses.

  6. If desired, add lemon juice or juice of any acid fruit to reduce sweetness.
