Ingredients

Directions

  1. Prepare the yeast by boiling a small handful of hops in 1 quart of water, straining it, and pouring it over enough flour to make a thin batter. When cool, add ½ pint of distillery yeast, strain again, and let stand until light, ideally the day before use.

  2. In the morning, cream together the butter and lard, then add the sugar and mix thoroughly.

  3. Take a little less than half of the creamed mixture and rub it into the warmed flour.

  4. Warm the milk (but do not heat it) and mix in the yeast with the flour, butter, and sugar mixture. Mix thoroughly and let it stand in a warm place until very light, ideally by 9 or 10 PM.

  5. Beat the eggs separately and mix them with the remaining shortening and sugar, then add the spices and wine.
