Why it works: Clove and ginger match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 6,038 recipes. Both carry estragole, which smells anise, licorice. The science ↓
Rhubarb Syrup
Ingredients
Directions
Prepare the rhubarb
Wipe the rhubarb but do not skin it, then cut it into finger lengths.
Place the rhubarb in a saucepan with the cold water and boil until it is completely broken up.
Pass the mixture through a canvas bag into a pan and let it cool.
Make the syrup
Add the sugar, cloves, ginger, lemon rind (only the yellow part), and lemon juice.
Boil again until the mixture reduces and thickens slightly.
Once cool, bottle and cork the syrup.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Rhubarb
- Provides the main tart flavour and the bulk of the liquid once broken down.
- Lump sugar
- Sweetens the syrup and, as it boils down, thickens it and helps preserve it.
- Lemon juice
- Adds acidity that brightens the rhubarb flavour and helps keep the syrup fresh.
The step that matters
Boil again until the mixture reduces and thickens slightly. Sugar and fruit juice thicken as water evaporates, so boiling too briefly leaves a thin syrup, while over-boiling makes it too dense and sticky once cool.
Swap the rhubarb
How well each one fits the dish's main ingredients (sugar, lemon, clove, ginger):
- Cinnamonfits better
- Cardamomfits better
- Allspicefits better

Fit is the average pairing score against sugar, lemon, clove, ginger. Candidates are from the same food group and used in at least 100 recipes.
