What each ingredient does

Gelatine or isinglass
Forms the gel that sets the milk into a firm, wobbly jelly.
Peptonised milk
Provides the creamy base and flavour, with its proteins partly broken down by peptonising.
Sugar
Adds sweetness and balances the tartness of the citrus juice.
Lemon or orange juice
Adds acidity and bright citrus flavour that cuts the richness of the milk.
Rum, brandy, or wine
Adds aroma and warmth to the jelly's flavour.

The step that matters

Boil the peptonised milk for the full digestion time. Peptonised milk must be heated long enough for its enzymes to break down proteins fully. If it is undercooked or too brief, the milk may not have digested enough, and a jelly made with it can taste bitter or set unevenly.
